First of all, we've made some BIG life changes lately. We joined the Y and the kids and I have been going five days a week. Yep, five days of cardio workouts a week. It's been a challenge but I'm thirty days in and loving it! It makes me feel less guilty about eating all of this decadent food and it's certainly been good for the waistline. Other than here, you won't see me post about it, I want to do one of those "tada" releases next year :)
So, I've been visiting our local farmers market and it seemed like the glory of the summer season was never going to get here. Thankfully, yesterday it was full of all the goodies I love so much. I remembered having seen a roasted corn salad recipe from my Pioneer Woman cookbook. I called Dave, made sure I had the ingredients right and came home loaded down. We whipped up a few homemade chicken pizzas, BBQ chicken for the kids and satay chicken for Dave and I. This was my first try at the Satay and I think I'll be on the prowl for a spicier sauce next time. So I prepped the veggies for David to grill, sweet corn, red pepper, yellow squash and red onion. While he was busy grilling I whipped this awesome dressing up(think balsamic vinegar, olive oil,salt,chopped garlic and about 12 leaves of fresh basil). A lot of chopping, a quick toss and this salad was done. AMAZING is all I can say!!!! This will be going with us to the family reunion next weekend for sure :)
I can't finish without mentioning the awesome ZAZO Moscato spritzer. My neighbor Heidi shared a swig of hers at the pool the other day and I've been dreaming about it ever since. Even if you aren't a wine drinker, this is so light and sparkling on the tongue you'll love it!
